Fruit Smoothies

1 cup fruit (bananas, strawberries, raspberries)

1 1/2 cups orange or apple juice

1/2 cup yogurt, plain or fruit-flavoured

 

Combine all of the ingredients in a blender and mix until smooth. Add more juice for a thinner smoothie, more yogurt for a thicker one.

Peach Custard

3    eggs
1/4 cup    sugar
1 cup    cream
1 tsp    vanilla
a splash of    rum
2 Tbsp    flour
3    peaches, sliced

Preheat the oven to 325F. Whisk together the eggs, sugar, cream, vanilla, rum and flour. Pour 1/2 of the mixture into a greased baking dish and bake for 5 minutes. Add the peaches and remaining custard mixture and bake until set, about 20 minutes.

Chocolate and Banana Bread Pudding

4 slices of    good bread, crust removed
2 Tbsp    butter
3    bananas, mashed
3/4 cup    cream
1    egg
2 oz    good chocolate, chopped into small chunks

Preheat your oven to 350F. Beat egg and cream together, set aside. Butter one side of all of the slices of bread. Place two of the slices of bread buttered side down in a small baking dish. Spread the mashed bananas over top. Cover the bananas with the remaining 2 slices of bread, buttered side up. Push down on the whole lot with your hands, pour in the cream and, sprinkle with the chocolate chunks. Bake it in the oven for about 25-30 minutes.

An Italian Snack

4 slices    really good bread, sliced thick
1 1/2 ounces    dark chocolate

Preheat a toaster oven or a regular oven to 450F. Make two sandwiches arrange half of the chocolate on one slice of the bread, and place another slice of bread on top. Repeat for the second sandwich. Sweet Treat

1 tsp butter or margarine
1 cup brown sugar
1 egg
1 cup chopped dates
1 cup sesame seeds
1 cup flaked coconut
Additional 1/3 cup coconut for covering

Melt the butter. Mix with sugar and egg; mix well. Add chopped dates, seeds and coconut. Roll into balls then roll in coconut. Place on a buttered cookie sheet and cook at 325F for 15 minutes.

Rhubarb Bread Pudding

3 cups cut-up rhubarb
1 cup sugar
3 cups stale bread,
1/2 cup milk
1/2 cup margarine
1/2 cup sugar
2 eggs
1 tsp vanilla
1 tsp cinnamon
1/2 cup shredded coconut

My husband Barry is the rhubarb grower – I am the rhubarb cook. This is our favorite.

In a bowl put cut-up rhubarb with 1 cup of sugar; set aside. In another bowl, pour milk over bread cubes; set aside. In another bowl, cream margarine and sugar, add eggs and mix well the add vanilla. Fold in the bread mixture, and then the rhubarb. Pour into a buttered 2 qt casserole dish, sprinkle with cinnamon and coconut. Bake at 350F for 45 minutes.
