Banana Loaf/Muffins
2 ripe bananas
1 cup buttermilk, or 3/4 cup milk and juice of 1 lemon
1 tsp baking powder
1/3 cup vegetable oil
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1/4 tsp ground cinnamon
1 tsp vanilla
1 3/4 cup flour
pinch salt

Preheat your oven to 375F. Mash the bananas in a large bowl, then stir in the buttermilk and baking powder. And set aside. Mix the oil, sugars and eggs together in a large bowl and stir until smooth. Add the spices, flour and salt and mix until well-combined. Stir in the banana mixture and pour the batter into the buttered loaf tin. Bake for an hour, or until a knife inserted into the cake comes out clean. OR, for muffins, pour the batter into a buttered muffin tin and bake for 20 minutes. (makes 6 large muffins).
Waffles
2 eggs, separated
2 cups flour
1 tsp baking powder
a pinch of salt
2 cups milk
oil
maple syrup
butter
icing sugar
juice of 1/2 lemon
Plug in your waffle iron and let it heat up while you prepare the batter. Beat the egg whites until stiff. In a large mixing bowl, mix together the flour, baking powder and salt. Stir in the milk and egg yolks and beat until smooth. Carefully fold in the beaten egg whites. Pour a ladleful of the batter into the greased, preheated waffle iron and cook for 3-4 minutes, depending on the iron. Serve immediately with maple syrup and butter, or with some icing sugar and lemon juice sprinkled over top. Repeat with the remaining batter.
