Spaghetti with Meat Sauce

1/2 lb    spaghetti
1/2 lb    ground beef
1    onion, chopped
2    garlic, chopped
2    green pepper, chopped
2 Tbsp    tomato paste
1 19 oz    tin crushed tomatoes or 4 ripe, chopped
1 tsp    dried oregano
salt

Put the spaghetti on to cook. Fry the beef in a saucepan over medium-high heat for 2-3 minutes, then add the onion, garlic and green pepper. Cook for 3 minutes, then add the tomato paste and stir it in. Add the tomatoes and oregano, bring to the boil, drain the pasta and serve. (For a thicker sauce, continue cooking over low heat for 20 minutes, covered).

Meaty Beans

1 lb ground meat
1-3 Jalapeno peppers, diced
1 medium onion, diced
1 – 32 oz can Ranch-style beans
8 oz Masterpiece* BBQ sauce

Brown meat, onion, and peppers together. Drain excess grease. Add ranch style beans, bbq sauce and mix well. Heat evenly and serve with main dish.

* In Canada, Bullseye is a reasonable substitute for Masterpiece – James

Fried Steak – Texas Style

2-3 lbs round steak or deer venison
water
salt & pepper
flour
oil

Trim all fat from meat and pound with a meat hammer until well tenderized. Lightly salt each piece and put in a bowl. Cover entire amount of meat with water and put in refrigerator overnight. Drain water from meat and rinse with fresh water. Salt and pepper the still moist meat to taste. Coat well with all-purpose flour. Heat canola oil in a skillet to medium high heat and put flour-coated meat in skillet. Turn meat over once bottom side is firm and crispy. Fry other side of meat to same consistency. Remove and put on paper towel-lined platter. Serve warm with biscuits, cream gravy, and mashed potatoes. Simply delicious!!

Easy Hamburger Helper

1 pkg lean hamburger
2 cans tomato soup
1 onion, chopped
handful of mushrooms, sliced
oregano
pepper to taste
macaroni

Cook pasta as directed. In a dutch oven heat a bit of oil then add hamburger and cook till no longer pink. Then add chopped onion and mushrooms. Stir till heated. Add the tomato soup and heat through. Drain the pasta and add to meat mixture heating right through till hot. Serve.
